The Sushi Bundt Cake is a creative twist on traditional sushi, transforming familiar flavors into a beautifully layered, cake-like presentation. This dish combines sushi rice, crab meat, shrimp tempura, and fresh vegetables into a visually stunning and delicious experience, perfect for sushi lovers looking to try something new. It's a great centerpiece for parties or a unique dinner option.

Ingredients:

  • 1.5 cups uncooked calrose rice (cooked according to package instructions or in a rice cooker)
  • 2 tablespoons rice vinegar + 2 teaspoons
  • 1 tablespoon sugar
  • 3 tablespoons black and toasted sesame seeds
  • Pinch of salt
  • 2 cups crab meat (real or imitation)
  • 8 pieces shrimp tempura
  • 1/4 cup + 1 tablespoon Japanese mayo
  • 1 tablespoon sriracha
  • 3 scallions (chopped, separate white and green parts)
  • 2 teaspoons sesame oil
  • 1 English cucumber (thinly sliced)
  • 1 large avocado (sliced)
  • 1/2 orange (juiced)
  • 1/2 lemon (juiced)
  • 2 tablespoons cilantro (chopped)
  • Shichimi togarashi
  • Toasted nori (cut into strips)

Directions:

  1. Prepare the Rice: Mix 2 tablespoons of rice vinegar, sugar, and a pinch of salt. Stir into the cooked rice along with the sesame seeds. Allow the rice to cool completely, preferably overnight.
  2. Make the Crab Mixture: In a bowl, combine the crab meat with Japanese mayo, sriracha, sesame oil, 2 teaspoons of rice vinegar, and the white and light green parts of the scallions. Mix well.
  3. Assemble the Bundt Cake: Lightly spray a bundt pan with cooking oil. Start by layering the bottom with half of the seasoned rice, pressing it down. Follow with a layer of cucumber slices, crab mixture, shrimp tempura, and avocado slices. Press the remaining rice on top. Using a plate, carefully flip the bundt pan to invert the cake.
  4. Prepare the Sauce: Mix the green parts of the scallions, cilantro, orange juice, and lemon juice in a small bowl. Add tamari to taste.
  5. Garnish and Serve: Top the inverted sushi bundt cake with nori pieces and a sprinkle of shichimi togarashi. Drizzle the citrus sauce over the top before serving.

  • Adjust the level of sriracha in the crab mixture to control the spiciness.
