Introduction: This Soupreme Skillet Chicken recipe is a treasured find from my Auntie Bev's collection. It's a comforting and flavorful dish that brings back warm memories of family dinners. The combination of tender chicken thighs, fresh zucchini, and a rich, creamy sauce makes it a perfect meal for any night of the week. Auntie Bev had a knack for creating delicious meals that were both simple and satisfying, and this recipe is no exception. It's a delightful way to honor her legacy in the kitchen and share a taste of family tradition.
Ingredients:
- 2 medium zucchini
- 2 lbs. of chicken thighs
- 2 tablespoons of shortening
- 1 can of cream of celery soup
- 1 tsp of paprika
- 1/2 tsp of crushed basil leaves
- 1 medium clove of garlic, minced
- 1/2 cup of drained, chopped canned tomatoes
Directions:
- Prepare the Ingredients:
- Season the chicken thighs with your preferred seasonings and set them aside.
- Cut the zucchini in half lengthwise, then slice diagonally into 1/2-inch pieces.
- Brown the Chicken:
- In a large skillet, heat the shortening over medium-high heat. Add the chicken thighs and brown them on all sides. Once browned, pour off any excess fat.
- Cook the Chicken:
- Add the cream of celery soup, paprika, basil, and minced garlic to the skillet with the chicken. Stir to combine.
- Cover the skillet and reduce the heat to low. Let it cook for 30 minutes, stirring occasionally.
- Add Vegetables:
- After 30 minutes, add the sliced zucchini and chopped tomatoes to the skillet. Stir to combine with the chicken and sauce.
- Simmer Until Tender:
- Continue cooking, covered, for an additional 15 minutes, or until the zucchini is tender and the chicken is cooked through.
Tips:
- For a richer flavor, you can substitute the shortening with butter or olive oil.
- If the sauce is too thick, you can add a little water or chicken broth to reach the desired consistency.
Serving Suggestions:
- Serve the Supreme Skillet Chicken over rice or mashed potatoes to soak up the delicious sauce.
- Pair with a fresh garden salad or steamed vegetables for a complete meal.
