Traditional Southern Collard Greens
Ingredients

2 bunches collard greens (about 2 lbs), cleaned and chopped

6 slices thick-cut bacon, chopped

1 small onion, chopped

2 cloves garlic, minced

4 cups chicken broth

1 tablespoon Better Than Bouillon (chicken or vegetable base)

1 tablespoon apple cider vinegar (plus more to taste)

1 teaspoon Worcestershire sauce

1 teaspoon brown sugar (optional)

1/2 teaspoon smoked paprika

1/2 teaspoon crushed red pepper flakes (optional)

Salt and black pepper, to taste
Directions

Cook bacon in a large pot or Dutch oven until crisp. Remove with a slotted spoon; leave fat in the pot.

Sauté onion in bacon fat until soft, then add garlic.

Stir in broth, Better Than Bouillon, vinegar, Worcestershire, and seasonings. Simmer 10–15 minutes to develop flavor.

1½ cups BBQ sauce

2 tbsp apple cider vinegar

1 tbsp brown sugar

Directions

Preheat oven to 400°F.

Season chicken with paprika, garlic powder, onion powder, salt, pepper, and cayenne.

Mix BBQ sauce, vinegar, brown sugar, and Worcestershire.

4 medium Garnet yams, peeled & sliced into ½-inch rounds

½ cup unsalted butter

¾ cup brown sugar

¼ cup granulated sugar

1 tsp cinnamon

½ tsp nutmeg

½ tsp salt

1 tsp vanilla extract
-
2 tbsp fresh orange juice (optional)
Directions

Preheat oven to 375°F. Grease a 9x13” baking dish.

Arrange sweet potatoes in even layers.

Melt butter in a saucepan and stir in sugars, spices, vanilla, and orange juice.

Pour syrup over sweet potatoes. Cover with foil and bake for 30 minutes.

Uncover, baste with syrup, and bake 20–25 minutes more until soft and caramelized.
