
Loaded Garlic Parmesan Bacon Cheeseburger Empanadas

These savory empanadas combine the flavors of a classic bacon cheeseburger with a cheesy, garlicky Parmesan topping. Perfect for parties, game day, or a family-friendly dinner!
Ingredients:
- 1 lb ground beef
- About 4 slices bacon, chopped
- 1 cup shredded cheddar cheese
- ½ cup cream cheese, softened
- 1 tablespoon minced garlic
- 1 teaspoon onion powder
- A few splashes of Worcestershire sauce
- Salt and pepper, to taste
- 1 can (16 oz) refrigerated biscuit dough
- ¼ cup grated Parmesan cheese
- 2 tablespoons butter, melted
- Fresh parsley, chopped (for garnish)

Preheat and Prep:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. -
Cook the Bacon and Beef:
In a skillet over medium heat, cook the chopped bacon until crisp. Remove with a slotted spoon and set aside on a paper towel-lined plate.
In the same skillet, brown the ground beef with the minced garlic and a few splashes of Worcestershire sauce, using some of the bacon grease. Cook until the beef is fully browned. Drain any excess grease. -
Season and Mix Fillings:
Add the onion powder, salt, and pepper to the beef. Stir in the cream cheese and shredded cheddar until fully combined. Remove from heat and stir the cooked bacon back in. -
Assemble the Empanadas:
Open the can of biscuit dough and separate into individual biscuits. Flatten each biscuit into a 4- to 5-inch circle.
Place a spoonful of the beef and cheese mixture in the center of each flattened biscuit. Fold the dough over the filling to form a half-moon shape. Pinch the edges to seal firmly. -
Brush with Garlic Parmesan Butter:
In a small bowl, combine the melted butter and grated Parmesan cheese. Brush this mixture over the tops of the empanadas. -
Bake to Perfection:
Place the empanadas on the prepared baking sheet and bake for 12–15 minutes, or until golden brown and cooked through. -
Serve and Garnish:
Let the empanadas cool slightly before serving. Garnish with fresh parsley for a pop of color. Serve warm and enjoy!
