Ingredients:

  • ½ cup Italian-seasoned bread crumbs
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • ½ cup all-purpose flour
  • 1 egg
  • 1 tablespoon lemon juice
  • 2 skinless, boneless chicken breast halves
  • ½ cup basil pesto
  • ½ cup shredded mozzarella cheese, divided
  • 4 slices pepperoni, or to taste (divided)
  • 1 package of on-the-vine cherry tomatoes
  • Fresh basil leaves for garnish

Directions:

  1. Preheat Oven:

    • Preheat your oven to 400°F (200°C).
  2. Prepare Coating Mixtures:

    • In a shallow bowl, combine the Italian-seasoned bread crumbs, grated Parmesan cheese, salt, and black pepper.
    • Place the flour into a second shallow bowl.
    • In a third bowl, whisk together the egg and lemon juice.
  3. Coat the Chicken:

    • Dip each chicken breast in the egg mixture, then dredge it in the flour.
    • Dip the floured chicken back into the egg mixture and then press it into the breadcrumb mixture until fully coated.
    • Place the coated chicken breasts into a baking dish along with the on-the-vine cherry tomatoes.
  4. Bake the Chicken:

    • Bake in the preheated oven for about 20 minutes, until the chicken is heated through and the crumbs are golden.
  5. Add Toppings:

    • Spoon 2 tablespoons of basil pesto onto each chicken breast.
    • Sprinkle each with half of the mozzarella cheese and top with half of the pepperoni slices.
  6. Final Bake:

    • Return the dish to the oven and bake for an additional 10 minutes, or until the chicken is no longer pink inside and the juices run clear.
  7. Garnish and Serve:

    • Garnish with freshly grated Parmesan cheese and fresh basil leaves before serving.

Tips:

  • You can substitute the basil pesto with sun-dried tomato pesto for a different flavor profile.
  • Serve with a side of pasta or a fresh green salad to complete the meal.

Serving Suggestions:

  • Enjoy this dish with a glass of chilled white wine for a perfect dinner.
  • The roasted cherry tomatoes make a wonderful accompaniment to the chicken, adding a juicy and sweet contrast to the savory elements.
